The culinary delights and deliciousness of Korea

It is amazing that I did not find the time to write about this before. Prior to my departure, I was curious about eating in Korea. From my limited experience as a child and my trips to local Korean restaurants (which are now more mediocre than before given my experience) I feared that there would be too many beef options and that I would struggle to get enough to eat (yeah, right). Oh no no no, quite on the contrary. From the amazing Korean bbq, chicken dakgalbi in Choonchun, to the Bi Bim Bap (I did not eat nearly as much as I should have), and the endless sidedishes-kimchi, water kimchi, soups, salted fish, jab chae, and rice, I was COVERED. Some would have to wonder how I managed to lose about 12 lbs. while I was away. My conclusion? Lots of walking, sweating, and "pure" eating. At almost every meal, I heard someone say "this is good for your health." Over time, I came to realize that all Korean food is good for your health, lol. Much of that is due to the natural ingredients and the overall food preparation. I do not recall eating anything that was "swimming" in butter or oil. Needless to say, I am suffering from a bit of Korean food withdrawal. My only gripe about Korean food...NO CHEESE!!! Guess I'm going to have to put my culinary skills to the test. Mind you, that is no easy task, since I spend my life making desserts (example pictured), not entrees. Oooh, maybe I can convince my husband (the former sous chef) to take on Korean cuisine! :-) Yum yum yum.
